Ingredients
Chicken and Marinade
- 1 teaspoon olive oil
- 1 pound boneless, skinless chicken thighs (patted dry)
- Salt and pepper to taste
Base and Aromatics
- 1 medium onion (diced or grated)
- 1 inch piece fresh ginger (peeled and minced)
Liquid and Grains
- 1 (15oz) can coconut milk
- 1 1/2 cups chicken broth
- 1 1/2 cups rice (uncooked)
Additional Toppings and Flavor
- 1/2 cup unsweetened, finely shredded coconut
- 2 green onions (diced)
- 2 limes (juiced)
- 1/4 cup chopped cilantro
- Olive oil (for cooking)
Instructions
- Preheat Oven: Preheat the oven to 400°F (204°C) to ensure it’s ready for baking the chicken and rice.
- Heat Oil: Drizzle olive oil into a Dutch oven and heat it over medium to medium-high heat to prepare for searing the chicken.
- Season Chicken: Sprinkle salt and pepper evenly over the chicken thighs to season thoroughly before cooking.
- Sear Chicken: When the oil is hot, brown the chicken thighs for 3-4 minutes on each side until they develop a golden crust; then remove and set aside.
- Sauté Aromatics: Add diced onion and minced ginger to the pan and cook until tender and translucent, approximately 5 minutes, releasing their fragrant flavors.
- Add Liquids: Pour in the coconut milk and chicken broth, stirring to scrape up any browned bits from the bottom of the pan for extra flavor.
- Add Rice: Stir uncooked rice into the liquid mixture to evenly coat it with the flavorful base.
- Nestle Chicken and Coconut: Place the seared chicken thighs gently on top of the rice mixture and sprinkle the shredded coconut over the dish.
- Cover and Bake: Place a tight-fitting lid on the Dutch oven and bake at 400°F for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
- Finish with Fresh Herbs and Lime: Once baked, sprinkle diced green onions and chopped cilantro over the dish and squeeze fresh lime juice on top for brightness.
- Season and Serve: Adjust seasoning with salt and pepper as needed, then serve the dish immediately while hot and fresh.
Notes
- Use jasmine or basmati rice for best texture and aroma.
- If you prefer less saturated fat, remove the skin from chicken thighs or use chicken breasts.
- For spicier variation, add a pinch of chili flakes when sautéing onions and ginger.
- Ensure the lid fits tightly to trap steam and cook the rice evenly.
- Leftovers keep well in the refrigerator for up to 3 days and reheat beautifully.
