  • 4 large portobello caps
  • 1 bunch asparagus, chopped
  • 3 oz. grape tomatoes (about ½ cup)
  • 2 cloves garlic, minced
  • ½ a lemon

  • 2 Tbsp olive oil, divided
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ½ tsp freshly cracked black pepper, divided
  • 3 Tbsp balsamic vinegar
  • ½ Tbsp brown sugar
  • 1 Tbsp soy sauce
  • ¼ tsp dried thyme


Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Potatoes: Cut the Yukon Gold potatoes into halves or quarters so that the pieces are about 2 inches each. Leave the skin on for texture and nutrition. Toss the potatoes in a bowl with 1 tablespoon of olive oil, garlic powder, salt, and ¼ teaspoon of freshly cracked black pepper until they are evenly coated. Spread the potatoes evenly over one-third of the prepared baking sheet and bake in the oven for 20 minutes.
  3. Clean Mushrooms: While the potatoes start roasting, gently clean the portobello mushroom caps using a dry or slightly damp towel to remove any dirt. Use a spoon to carefully scrape out the dark gills on the underside of each mushroom cap to reduce bitterness and allow better marinade absorption.
  4. Marinate Mushrooms: Place the mushroom caps into a large sealable plastic bag. Add 1 tablespoon olive oil, balsamic vinegar, brown sugar, soy sauce, minced garlic, dried thyme, and the remaining ¼ teaspoon of black pepper. Seal the bag and toss gently to coat all mushrooms thoroughly with the marinade. Let them sit while the potatoes continue roasting.
  5. Add Mushrooms to Oven: After the potatoes have baked for 20 minutes, remove the baking sheet from the oven. Arrange the marinated portobello mushrooms in the middle section of the baking sheet next to the potatoes. It’s fine if they crowd the pan slightly as they will shrink while roasting. Return the pan to the oven and roast for 15 minutes.
  6. Prepare Vegetables: While the mushrooms roast, place the emptied potato mixing bowl back on your work surface. Add the chopped asparagus and whole grape tomatoes to the bowl. Squeeze the juice of half a lemon over the veggies, and toss everything together so the asparagus and tomatoes are coated with the leftover spices from the potato mixture combined with fresh lemon juice.
  7. Combine and Finish Roasting: After the mushrooms have roasted for 15 minutes, remove the sheet pan and flip or rearrange the portobello caps for even cooking. Make room by moving the mushrooms so that about one-third of the pan is available. Spread out the asparagus and grape tomatoes on the empty section. Return the entire pan to the oven and bake for an additional 10 minutes until all vegetables are tender and lightly caramelized.
  8. Serve: Remove the baking sheet from the oven and divide the roasted potatoes, mushroom steaks, asparagus, and tomatoes into four portions. Serve warm as a wholesome, hearty, and balanced vegetarian dinner.
