- 1 Tablespoon lemon zest (about 1 lemon)
Instructions
- Preheat the oven: Set your oven to 350°F (177°C) and line an 8-inch square baking pan with parchment paper to prevent sticking.
- Prepare the crust and topping mixture: Using a handheld or stand mixer with a paddle attachment, beat together the softened butter and brown sugar on medium-high speed for about 3 minutes until creamy. Scrape down the bowl, add vanilla extract, and beat for another 30 seconds. Then, add the flour, baking powder, salt, and oats. Mix on medium speed until combined, resulting in a dry, crumbly mixture totaling about 3 to 3.5 cups.
- Form and bake the crust: Lightly press just over half of the crumble mixture evenly into the bottom of the prepared pan. Bake the crust for 12 minutes until lightly set.
