Description

Ingredients

Yeast Mixture

  • 1.5 cups warm water (370 ml)
  • 1 teaspoon sugar (4 grams)
  • 1/2 teaspoon active dry yeast (2 grams)

Dough

  • 3 cups gluten-free flour (420 grams) (Caputo brand recommended)
  • 1 teaspoon salt (5 grams)


Instructions

  1. Activate the yeast: In a bowl, combine the warm water, sugar, and active dry yeast. Stir and wait for five minutes to see if the yeast activates and starts bubbling. If not, restart this step, ensuring the water is lukewarm (not too hot or cold) to properly activate the yeast.
  2. Prepare the dry ingredients: In a large separate bowl, mix the gluten-free flour and salt together thoroughly.
  3. Combine the dough: Slowly add the activated yeast mixture to the flour and salt mixture, stirring until you achieve a thick, sticky dough that is neither too wet nor too dry.
  4. Let the dough rise: Cover the dough and let it rest at room temperature, away from drafts, for 5 hours. During this time, the dough will rise and develop texture without kneading.
  5. Shape the dough: Once risen, flour your counter and pour out the dough. Lightly flour the top and shape it gently into an oval or round loaf, without kneading.
  6. Prepare for baking: Transfer the shaped dough into any baking dish lined with parchment paper. Cover with a lid or, if a lid is unavailable, use double layers of foil to cover.
  7. Bake the bread: Place the covered bread into a cold oven, then set the oven temperature to 450°F (232°C). Bake covered for 40 minutes, starting the timer as soon as you turn the oven on.
  8. Finish baking uncovered: After 40 minutes, remove the cover or foil and bake an additional 30 minutes or until the bread is light and golden brown all over.
  9. Cool and serve: Allow the bread to cool for 5 to 10 minutes before slicing and enjoying.
