- 7 tablespoons (98g) butter (salted or unsalted), melted
- 3 tablespoons sprinkles
Gelatin Bloom
- 2 tablespoons cold water
- 2 1/4 teaspoons (0.25 oz package) unflavored gelatin
Cheesecake Filling
- 24 ounces (678g) cream cheese, room temperature
- 1/2 cup (104g) sugar
- 1 1/2 cups strawberry Nesquik powder mix (or similar strawberry milk powder)
- 1/4 cup (58g) sour cream
- 2 teaspoons strawberry extract
Whipped Cream for Filling
- 1 1/4 cups (300ml) heavy whipping cream, cold
- 3/4 cup (86g) powdered sugar
- 1 teaspoon vanilla extract
Whipped Cream for Topping
- 1 cup (240ml) heavy whipping cream, cold
- 1/2 cup (58g) powdered sugar
- 3/4 teaspoon vanilla extract
- Sprinkles for garnish
Instructions
- Make the crust: Line a 9-inch (23cm) springform pan with parchment paper at the bottom and grease the sides to prevent sticking. In a small bowl, combine Oreo cookie crumbs, melted butter, and sprinkles. Press this mixture evenly into the bottom and about an inch up the sides of the springform pan. Place the crust in the refrigerator to chill while you prepare the filling.
- Bloom the gelatin: In a small bowl, add cold water and sprinkle the unflavored gelatin evenly over the surface so all the powder is moistened. Let it sit for 5 minutes to fully hydrate and bloom without stirring to ensure proper gelatin activation.
- Prepare the cheesecake base: In a large mixer bowl, beat the room temperature cream cheese and sugar together until completely smooth and well combined. Add the strawberry milk powder and mix thoroughly until smooth again. Next, incorporate sour cream and strawberry extract, mixing until evenly distributed.
- Melt the gelatin: Heat the bloomed gelatin gently for about 10 seconds until completely melted but not boiling. Quickly add the melted gelatin to the cream cheese mixture and mix until fully integrated. Set this aside.
- Whip cream for filling: In a separate large bowl, combine the cold heavy whipping cream, powdered sugar, and vanilla extract. Whip on high speed until stiff peaks form, ensuring a light and airy texture.
- Fold whipped cream into cheesecake mixture: Gently fold the whipped cream into the cream cheese mixture in two additions. Use a spatula and fold carefully to maintain the mixture’s lightness and avoid deflating the whipped cream.
- Assemble the cheesecake: Pour the cheesecake filling over the prepared crust in the springform pan. Spread the filling evenly with a spatula for a smooth top. Refrigerate the cheesecake for 4 to 5 hours or until fully chilled and set.
- Remove from pan and smooth edges: Carefully remove the cheesecake from the springform pan and place it on a serving plate or platter. If needed, use an offset spatula to smooth the sides for a clean finish before decorating.
- Make the whipped cream topping: In a clean large bowl, whip the cold heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form. Transfer the whipped cream to a piping bag fitted with a decorative tip (Ateco tip 844 recommended).
- Decorate the cheesecake: Pipe the whipped cream around the outer top edge of the cheesecake, creating elegant swirls or rosettes. Sprinkle colorfully over the whipped cream for a festive look.
- Storage: Store the cheesecake covered in the refrigerator or inside an air-tight cake carrier. For best taste and texture, consume within 4 to 5 days.
Notes
- Ensure cream cheese is at room temperature to avoid lumps in the filling.
- Do not skip blooming the gelatin; it is essential for the cheesecake to set properly without baking.
- Use cold heavy whipping cream for better volume and stability when whipping.
- You can substitute strawberry milk powder with a similar strawberry-flavored powder or fresh strawberry puree but adjust sweetness accordingly.
- Store leftovers tightly covered to maintain freshness and prevent absorption of other fridge odors.
