These No-Bake Chocolate Peanut Butter Oatmeal Cups are a quick, delicious treat packed with protein and healthy fats. Ingredients

Base layer:

  • 1 cup creamy peanut butter
  • 1/4 cup pure maple syrup (or honey)
  • 1/4 cup melted coconut oil (or avocado oil as a substitute)
  • 1 1/2 cups old-fashioned rolled oats (gluten-free if needed)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Chocolate topping:

  • 1 cup semi-sweet chocolate chips (or dark chocolate)
  • 1 tablespoon coconut oil


Instructions

  1. Prepare the Muffin Tin: Line a standard 12-cup muffin tin with paper or silicone liners. Silicone liners are preferred as they make it easier to remove the cups after chilling.
  2. Mix the Base Layer: In a medium bowl, combine peanut butter, maple syrup, melted coconut oil, vanilla extract, and a pinch of salt. Stir until smooth and creamy. Add the rolled oats and mix until everything is evenly coated and sticky.
  3. Form the Cups: Spoon about 2 tablespoons of the oat mixture into each muffin liner. Press down firmly with the back of a spoon to create an even, dense layer. Freeze the muffin tin for about 10 minutes to firm up the base.
  4. Make the Chocolate Topping: In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring between, until smooth and fully melted. Alternatively, use a double boiler on the stovetop to melt gently.
  5. Top the Cups: Remove the muffin tin from the freezer. Spoon about 1 tablespoon of the melted chocolate over each oat base, spreading evenly to cover the surface.
  6. Add Salt and Chill: Optional – sprinkle a small pinch of flaky sea salt on top of each cup for a sweet-salty balance. Return the tin to the freezer for 15–20 minutes or until the chocolate is completely set.

  • Store these cups in the refrigerator for up to 5 days or freeze for up to 2 months.
