Description

This No-Bake Boston Cream Pie Cheesecake is a delightful dessert combining the creamy texture of cheesecake with a classic vanilla pudding flavor and a rich chocolate topping. Featuring a crunchy vanilla sandwich cookie crust and a smooth, luscious filling, this recipe requires no baking and is perfect for quick, crowd-pleasing treats.

Ingredients

Cheesecake

  • 16 ounces cream cheese (room temperature)
  • 2 (3.4 ounce) boxes instant vanilla pudding mix
  • 3 cups milk
  • 8 ounces whipped topping (such as Cool Whip)

Crust

  • 24 vanilla sandwich cookies
  • 4 tablespoons melted butter

Chocolate Topping

  • 1/4 cup butter
  • 1/2 cup sugar
  • 1/4 cup milk
  • 1/2 cup chocolate chips (+ more for topping, optional)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Prepare Cheesecake Mixture: In a large bowl, whip the cream cheese until it becomes light and smooth. Gradually add the milk and instant vanilla pudding mix, beating until well combined and the mixture thickens.
  2. Fold in Whipped Topping: Gently fold the whipped topping into the pudding and cream cheese mixture until evenly incorporated and smooth. Set aside.
  3. Prepare Crust: Melt the butter. Place the vanilla sandwich cookies into a large ziplock bag and crush them until they resemble coarse crumbs. Add the melted butter to the cookie crumbs and mix thoroughly to combine.
  4. Form Crust in Pan: Press the cookie crumb mixture firmly into the bottom of a 9×13 inch baking dish, smoothing it out evenly. Using the bottom of a measuring cup to press the crust helps achieve a compact base.
  5. Assemble Cheesecake Layer: Spread the prepared cheesecake mixture evenly over the cookie crust, smoothing the top with a spatula.
  6. Make Chocolate Topping: In a small saucepan over medium-low heat, combine chocolate chips, butter, sugar, and milk. Stir continuously until the mixture melts and becomes smooth. If using vanilla extract, stir it in now.
  7. Add Topping and Chill: Pour the warm chocolate topping evenly over the cheesecake layer. Optionally, sprinkle additional chocolate chips on top for garnish. Refrigerate the assembled cheesecake for 3 to 4 hours until set.
  8. Serve: Once chilled and firm, cut into squares and serve chilled for a rich, creamy, no-bake dessert.

Notes

  • Use room temperature cream cheese to ensure a smooth cheesecake mixture without lumps.
  • Be gentle when folding the whipped topping to maintain its light, airy texture.
  • Pressing the crust firmly helps the base hold together well when serving.
  • The chocolate topping should be stirred constantly over low heat to prevent burning and achieve a smooth texture.
  • Refrigerate the dessert for at least 3-4 hours to allow it to set completely before cutting.
  • For a richer flavor, consider adding a teaspoon of vanilla extract to the cheesecake mixture as well.
