These No Bake Blondie Bars are a delicious and healthy treat made with almond butter, almond flour, and a natural sweetener blend. Ingredients

Base Layer

  • ½ cup Almond Butter
  • ¼ cup Coconut Oil (melted)
  • 2 cups Almond Flour
  • 2 tbsp Vanilla Extract
  • ¼ cup Maple Syrup

Top Layer

  • ¾ cup Raw Walnuts
  • 10 Pitted Dates
  • 2 tbsp Maple Syrup
  • ¼ tsp Sea Salt


Instructions

  1. Prepare the Base Layer: In a large bowl, mix together almond butter, melted coconut oil, maple syrup, vanilla extract, and almond flour until the mixture forms a thick, dough-like consistency. Line a bread loaf pan with parchment paper and press the mixture evenly into the bottom to form a thick layer.
  2. Freeze the Base Layer: Place the loaf pan with the base layer into the freezer for about 10 minutes to allow it to firm up while you prepare the top layer.
  3. Prepare the Top Layer: In a food processor, combine raw walnuts, pitted dates, maple syrup, and sea salt. Blend until the mixture becomes thick and slightly sticky, stopping occasionally to scrape down the sides with a spatula to ensure even blending.
  4. Apply the Top Layer: Remove the base layer from the freezer and gently press the top layer evenly over it. This layer will be thinner and more delicate, so spread it carefully for a smooth, even coverage.
  5. Final Freeze and Serve: Return the assembled bars to the freezer for a few more minutes to set the layers firmly. Once set, remove from the pan, cut into 18 bars, and enjoy your no bake blondie bars!
