  • 48 coated candy eggs (Cadbury mini eggs are recommended)


Instructions

  1. Prepare Peanut Butter Mixture: In a medium saucepan over medium-low heat, combine peanut butter, honey, a pinch of salt, and butter. Stir continuously until the butter melts and the mixture becomes smooth and well combined.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the oats, vanilla extract, and cocoa powder. Pour the warm peanut butter mixture into the bowl and stir everything together thoroughly until fully incorporated.
  3. Form Cookie Nests: Using a large spoon, drop tablespoon-sized balls of the mixture onto a parchment-lined sheet pan. Spray a rounded handle with non-stick spray and press into the center of each cookie mound, creating a well by shaping and pressing edges outward to form a nest shape.
  4. Chill Cookies: Place the sheet pan with shaped cookies in the refrigerator for 20-30 minutes to allow them to firm up and set.
  5. Add Candy Eggs and Serve: Once chilled, add three coated candy eggs to the center of each nest just before serving to create the classic birds nest appearance.
