Description

This hearty and flavorful roast beef recipe is made using the Ninja Foodi Possible Cooker Pro, combining the ease of pressure cooking with the delicious taste of a slow-cooked pot roast. The chuck roast is seared to lock in juices, then slow-cooked with a savory blend of beef broth, onion soup mix, cream of mushroom soup, Worcestershire sauce, and aromatic herbs like thyme and rosemary. Tender potatoes and carrots are cooked alongside, creating a complete comforting meal in one pot.

  • 1 tablespoon olive oil
  • 3 pounds chuck roast
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme (or fresh thyme)
  • 1 teaspoon dried rosemary (or fresh rosemary)
  • 2 pounds red potatoes, diced
  • 5 carrots, peeled and diced
  • 1 package Lipton Onion Soup Mix
  • 15 ounces cream of mushroom soup


Instructions

  1. Season the roast: Pat the chuck roast dry with paper towels, then generously season all sides with Kosher salt and black pepper to enhance the flavor and help form a nice crust.
  2. Prepare the soup mixture: In a small bowl, combine the beef broth, Lipton Onion Soup Mix, cream of mushroom soup, Worcestershire sauce, dried thyme, and dried rosemary. Stir well to create a flavorful cooking liquid.
  3. Sear the roast: Turn the Ninja Foodi Possible Pro Cooker to the SEAR setting. Add the olive oil and allow it to heat for 3 to 5 minutes. Carefully place the roast in the cooker and sear each side until a golden brown crust forms, which seals in the juices.
  4. Combine and cook: Place the seared roast back in the Pro Cooker pot. Pour the prepared soup mixture over the roast. Add the diced carrots and potatoes around the roast. Close the lid and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the roast is tender and vegetables are cooked through.
  5. Serve: Once cooking is complete, carefully remove the roast and vegetables. Slice the roast against the grain and serve with the cooked carrots and potatoes, spooning some of the delicious sauce from the pot over the top.
