Description

Neiman Marcus Cake, also known as Ooey Gooey Butter Cake, is a deliciously rich and gooey dessert featuring a buttery cake base topped with a creamy, sweet cream cheese layer. This upgraded recipe combines a yellow cake mix with a luscious cream cheese topping for a perfect balance of flavors and textures. Easy to prepare and perfect for any occasion, this cake delivers a delightful gooey center with a slightly crisp edge.

Ingredients

Base Layer

  • 1 package yellow cake mix
  • 2 eggs
  • ½ cup unsalted butter, melted
  • 1 tsp vanilla extract

Cream Cheese Topping

  • 8 oz cream cheese, softened
  • 2 eggs
  • 3 cups powdered sugar

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly grease a 13×9-inch baking pan with butter or non-stick spray to ensure the cake removes easily after baking.
  2. Make Base Layer: In a large bowl, combine the yellow cake mix, two eggs, melted butter, and vanilla extract. Mix well until a thick batter forms. Press this mixture evenly into the bottom of the prepared baking pan to create the base layer.
  3. Prepare Cream Cheese Topping: In a separate bowl, mix together the softened cream cheese, the remaining two eggs, and the powdered sugar. Beat until the mixture is smooth and creamy without lumps.
  4. Assemble Cake: Pour the cream cheese topping evenly over the pressed base layer in the baking pan. Spread it carefully to cover the entire surface.
  5. Bake: Place the pan in the oven and bake for about 35 minutes. The edges should turn lightly golden, and when a toothpick is inserted in the center, it should come out mostly clean but with a slightly gooey texture in the middle.
  6. Cool and Serve: Remove the cake from the oven and allow it to cool completely in the pan on a wire rack. Once cooled, cut into squares and serve.

Notes

  • Ensure cream cheese is softened to room temperature for easier mixing.
  • Press the base layer firmly and evenly for a uniform crust.
  • Don’t overbake; the gooey center is what makes this cake special.
  • For a richer flavor, use real vanilla extract, not imitation.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
