Ingredients
Chicken and Seasoning
- 2 tablespoons oil (divided)
- 1 lb boneless chicken thighs (cut into 1-inch | 2 cm pieces)
- 1/2 teaspoon salt (to taste)
- 1/4 teaspoon cracked pepper
- 2 teaspoons Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
Vegetables and Aromatics
- 8 ounces sliced brown mushrooms
- 3 tablespoons butter
- 1 tablespoon brown shallot (chopped)
- 1 tablespoon green bell pepper (seeded and chopped)
- 4 cloves garlic (minced)
- 2 tablespoons fresh parsley (chopped)
Instructions
- Season and Sear the Chicken: Heat 1 tablespoon of oil in a large pan over medium-high heat. Once hot, add the chicken pieces. Season them with salt, cracked pepper, Italian seasoning, garlic powder, onion powder, and paprika. Stir to coat evenly, then sear the chicken on all sides until browned and fully cooked, approximately 5 to 6 minutes. Remove the chicken from the pan and set aside on a plate, keeping it warm.
- Sauté Mushrooms: In the same pan, add the remaining 1 tablespoon of oil along with 1 tablespoon of butter. Add the sliced mushrooms and cook while stirring occasionally until they start to brown and soften, about 3 to 4 minutes.
- Cook Aromatics: Add the remaining 2 tablespoons of butter to the pan and allow it to melt. Then add the chopped shallots and green bell peppers, sautéing until softened and fragrant, roughly 3 minutes. Add the minced garlic and cook for an additional 30 seconds until aromatic.
- Combine Chicken and Vegetables: Return the cooked chicken along with any juices released on the plate back into the pan. Mix all ingredients thoroughly to coat the chicken with the pan juices. Continue cooking for another 1 to 2 minutes until the vegetables are tender and the chicken is heated through.
- Final Seasoning and Serve: Taste the dish and adjust seasoning with additional salt and pepper if needed. Garnish with fresh chopped parsley and serve warm.
Notes
- Use boneless chicken thighs for juicier and more flavorful bites compared to chicken breasts.
- You can substitute Italian seasoning with dried oregano and basil if preferred.
- Adding a splash of white wine or chicken broth when sautéing mushrooms can deepen the flavor.
- For a low-fat option, reduce the butter to 1 tablespoon and use olive oil instead of vegetable oil.
- Serve with rice, pasta, or crusty bread to soak up the flavorful pan juices.
