  • 2 tablespoons shredded or crumbled Parmesan cheese (avoid grated to prevent murkiness)

Other

  • 1/4 teaspoon dried oregano or 1 tablespoon chopped fresh oregano
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar or liquid from Giardiniera or green olives
  • 2 tablespoons chopped fresh parsley
  • French bread crostini, pita chips, or crackers for serving


Instructions

  1. Combine Ingredients: In a large bowl, combine Italian pickled vegetables, green olives, black or kalamata olives, pepperoncini peppers, roasted bell pepper, minced garlic, chopped hard salami, chopped capocolla, diced provolone or mozzarella cheese, Parmesan cheese, oregano, olive oil, red wine vinegar or its substitute, and fresh parsley. Mix thoroughly to ensure even distribution of flavors.
