Description

Mud Hen Bars are a delightful layered dessert featuring a buttery crust topped with semi-sweet chocolate chips and marshmallows, finished with a sweet and airy meringue-like topping made from whipped egg whites and brown sugar. Baked to golden perfection, these bars offer a perfect balance of rich and fluffy textures in every bite.

Ingredients

Base

  • 1/2 cup butter, room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 whole egg
  • 2 egg yolks
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Toppings

  • 1 cup mini marshmallows
  • 1 cup semi-sweet chocolate chips

Meringue Layer

  • 2 egg whites
  • 1 cup light brown sugar, packed

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the bars.
  2. Prepare the pan: Lightly spray a 9×13-inch baking pan with cooking spray to prevent sticking.
  3. Cream the base mixture: In a large bowl, cream together the room temperature butter, granulated sugar, one whole egg, two egg yolks, and vanilla extract until the mixture is smooth and well blended.
  4. Add dry ingredients: Gradually add the flour, baking powder, and salt to the creamed mixture, stirring just until combined. Do not overmix to ensure a tender base.
  5. Spread the base: Evenly spread this dough in the prepared baking pan to form the crust layer.
  6. Top with marshmallows and chocolate: Sprinkle mini marshmallows and semi-sweet chocolate chips evenly over the dough base.
  7. Whip egg whites: Using a clean bowl with a whisk attachment, beat the two egg whites on high speed until stiff peaks form, about 2 minutes.
  8. Incorporate brown sugar: Gently fold in the packed light brown sugar into the whipped egg whites, mixing until there are no lumps.
  9. Spread meringue layer: Carefully spread this meringue mixture over the marshmallows and chocolate chips, covering them completely.
  10. Bake the bars: Place the pan in the preheated oven and bake for 30 to 35 minutes, or until the top turns a golden brown color.
  11. Cool and serve: Remove from oven and allow the bars to cool completely in the pan, then cut into 24 squares and serve.

Notes

  • Use room temperature butter for easier creaming and better texture.
  • Ensure the mixing bowl and whisk are clean and free of grease when beating egg whites to achieve stiff peaks.
  • Do not overbake to prevent drying out the bars; check color for doneness.
  • These bars keep well in an airtight container at room temperature for up to 3 days.
