Ingredients
Base
- 1/2 cup butter, room temperature
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 whole egg
- 2 egg yolks
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Toppings
- 1 cup mini marshmallows
- 1 cup semi-sweet chocolate chips
Meringue Layer
- 2 egg whites
- 1 cup light brown sugar, packed
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the bars.
- Prepare the pan: Lightly spray a 9×13-inch baking pan with cooking spray to prevent sticking.
- Cream the base mixture: In a large bowl, cream together the room temperature butter, granulated sugar, one whole egg, two egg yolks, and vanilla extract until the mixture is smooth and well blended.
- Add dry ingredients: Gradually add the flour, baking powder, and salt to the creamed mixture, stirring just until combined. Do not overmix to ensure a tender base.
- Spread the base: Evenly spread this dough in the prepared baking pan to form the crust layer.
- Top with marshmallows and chocolate: Sprinkle mini marshmallows and semi-sweet chocolate chips evenly over the dough base.
- Whip egg whites: Using a clean bowl with a whisk attachment, beat the two egg whites on high speed until stiff peaks form, about 2 minutes.
- Incorporate brown sugar: Gently fold in the packed light brown sugar into the whipped egg whites, mixing until there are no lumps.
- Spread meringue layer: Carefully spread this meringue mixture over the marshmallows and chocolate chips, covering them completely.
- Bake the bars: Place the pan in the preheated oven and bake for 30 to 35 minutes, or until the top turns a golden brown color.
- Cool and serve: Remove from oven and allow the bars to cool completely in the pan, then cut into 24 squares and serve.
Notes
- Use room temperature butter for easier creaming and better texture.
- Ensure the mixing bowl and whisk are clean and free of grease when beating egg whites to achieve stiff peaks.
- Do not overbake to prevent drying out the bars; check color for doneness.
- These bars keep well in an airtight container at room temperature for up to 3 days.
