Instructions

  1. Prepare Ramekins: Preheat the oven to 400°F (200°C). Grease two 5-ounce ramekins thoroughly with butter or shortening. Then, sprinkle about 1 teaspoon of granulated sugar into each ramekin. Tilt and shake so the sugar coats the bottom and sides evenly. Discard any excess sugar.
  2. Melt Chocolate and Butter: Combine dark chocolate and butter in a microwave-safe bowl. Microwave at 50% power for 30 seconds, then stir well. If needed, heat for an additional 15 seconds. Stir until the mixture is smooth and fully melted.
  3. Make the Batter: In a medium mixing bowl, beat together the whole egg, egg yolk, granulated sugar, vanilla extract, and salt until the mixture is pale and slightly thickened. Gently fold in the melted chocolate and butter mixture, followed by the flour. Mix just until combined to avoid overmixing.
  4. Fill Ramekins and Bake: Evenly pour the batter into the prepared ramekins. Place the ramekins directly on the middle oven rack and bake for 11 to 12 minutes. The tops should be set while the center remains slightly jiggles, ensuring the lava inside stays molten.
  5. Remove and Unmold: Allow the cakes to rest for 1 to 2 minutes after baking. Run a sharp knife around the edges to loosen it. Invert each ramekin onto a plate, using oven mitts to protect your hands. Let them sit inverted for 20 seconds, gently pat the bottom of the ramekin, then lift it straight up to release the cake onto the plate.
