Ingredients
For the Cake
- 1 stick (½ cup) unsalted butter, plus more for buttering the ramekins
- 6 ounces bittersweet chocolate, chopped, best quality such as Ghirardelli
- 2 large eggs
- 2 large egg yolks
- ¼ cup plus 2 tablespoons light brown sugar, packed
- 1 teaspoon vanilla extract
- Pinch of salt
- 3 tablespoons all purpose flour
For Serving
- Confectioners’ sugar, for dusting
- Vanilla ice cream
- Sweetened whipped cream
- Berries (optional)
Instructions
- Prepare ramekins and oven: Preheat the oven to 450°F and position a rack in the middle. Generously butter six 6-ounce ramekins—do not substitute with non-stick spray for best results. Arrange ramekins on a baking sheet for easy handling.
- Melt butter and chocolate: In a medium bowl, melt the butter in the microwave until fully melted. Immediately add the chopped bittersweet chocolate and stir vigorously until the mixture is smooth and fully melted. If chocolate chunks remain, microwave in 20-second bursts, stirring in between, until smooth. Set aside to cool slightly.
- Whip eggs and sugar: Using an electric mixer fitted with a paddle attachment or beaters, beat the whole eggs, egg yolks, light brown sugar, vanilla extract, and salt on high speed. Continue beating until the mixture is thickened, pale, and voluminous, about 4 minutes.
- Combine chocolate and flour: Fold the melted chocolate and butter mixture into the egg mixture gently using a rubber spatula. Be sure to scrape the bottom as the chocolate tends to sink. Then gently fold in the all-purpose flour until just combined, avoiding overmixing to keep the batter light.
- Fill and bake: Spoon the batter evenly into the prepared ramekins. Place the baking sheet with ramekins in the oven and bake for 10 minutes, until cakes have puffed up and the edges appear set. The center should remain soft and molten.
- Cool and unmold: Remove ramekins from oven and let cool for 1 to 2 minutes. Carefully hold the hot ramekins with a dish towel and invert each onto dessert plates. If the cakes do not release easily, gently run a thin knife around the edges.
- Serve immediately: Dust the cakes with confectioners’ sugar and serve warm with vanilla ice cream, sweetened whipped cream, and berries if desired. Do not let sit after baking, as the centers will continue cooking and lose their molten texture.
- Make-ahead option: Batter can be spooned into ramekins and refrigerated covered for a few hours. Before baking, allow ramekins to come to room temperature for about 30 minutes.
Notes
- Use high-quality bittersweet chocolate for the best flavor and smooth texture.
- Butter ramekins generously to prevent sticking; do not substitute with cooking spray.
- Do not overbake; the center must remain molten for the signature gooey texture.
- Serve immediately after baking for optimal molten center experience.
- The batter can be prepared ahead of time and refrigerated in ramekins for convenience.
- If cakes don’t release easily, run a knife around edges gently before inverting.
- Pair with vanilla ice cream or whipped cream and fresh berries to complement the rich chocolate flavor.
