Ingredients

Cookie Base

  • 2 sticks (1 cup) unsalted butter, at room temperature
  • 2/3 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon instant coffee
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 cups semi-sweet chocolate chips

Caramel Sauce

  • 2 cups granulated sugar
  • 1/2 cup heavy cream, plus more if needed
  • 4 tablespoons unsalted butter, at room temperature, cut into chunks
  • 1 tablespoon Kahlua (optional)
  • Pinch of sea salt

Topping

  • 2-3 cups semi-sweet chocolate chips, for melting
  • 1 cup Rice Krispies cereal


Instructions

  1. Prepare Oven and Pan: Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish thoroughly to prevent sticking.
  2. Make Cookie Dough: In a large mixing bowl, beat together the unsalted butter, light brown sugar, and granulated sugar until the mixture is smooth and creamy. Add the eggs, vanilla extract, and instant coffee; beat until well combined and creamy. Gradually add the all-purpose flour, baking soda, and kosher salt; beat until the dough is fully incorporated. Fold in 2 cups of semi-sweet chocolate chips.
  3. Bake Cookie Base: Spread the cookie dough evenly into the prepared baking pan. Bake in the preheated oven for 18 to 20 minutes or until the center is just set. Remove from oven and allow to cool completely.
  4. Make Caramel Sauce: In a large, dry, heavy-bottomed pot over moderately high heat, cook the granulated sugar while stirring constantly with a heat-proof rubber spatula. Continue cooking until the sugar melts completely and turns a rich golden caramel color, approximately 8 minutes. Remove the pot from heat and allow to cool for 5 minutes.   5. Add Toppings: Melt the remaining 2-3 cups of semi-sweet chocolate chips using a microwave or double boiler until smooth. Evenly sprinkle the Rice Krispies over the caramel layer, then pour the melted chocolate over the top. Refrigerate the bars for 15-20 minutes to allow the chocolate to set.
