Ingredients
Crust
- 25 chocolate sandwich cookies
- 4 Tbsp salted butter, melted
Brownie Layer
- 4 Tbsp salted butter, softened
- ½ cup granulated sugar (120g)
- 1 egg
- 1 tsp vanilla extract
- ¼ cup unsweetened cocoa powder (30g)
- 3 Tbsp all-purpose flour (30g)
- ¼ tsp baking powder
Chocolate Pudding
- ½ cup granulated sugar (120g)
- ⅓ cup unsweetened cocoa powder (35g)
- ¼ cup cornstarch (30g)
- 2 cups milk
- 1 tsp vanilla extract
Whipped Cream Topping
- 1 cup heavy cream
- ½ cup powdered sugar (55g)
- ⅛ cup chopped chocolate chips (20g)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and gather all ingredients to prepare the pie.
- Prepare Crust: Crush the chocolate sandwich cookies finely using a food processor or by placing them in a ziplock bag and crushing them with a rolling pin. Fold in 4 tablespoons of melted butter until the mixture is fully combined.
- Bake Crust: Press the crushed cookie mixture evenly into the bottom and up the sides of a 9-inch pie pan, using a measuring cup to help press along the edges. Bake the crust in the oven for 10 minutes until it is set. Remove from the oven and allow it to cool completely for at least 30 minutes.
- Make Brownie Batter: In a medium bowl, cream together the softened butter and ½ cup granulated sugar using a rubber spatula. Add the egg and vanilla extract and mix until combined. Then fold in the cocoa powder, flour, and baking powder until well incorporated.
- Bake Brownie Layer: Spoon the brownie batter evenly over the cooled crust layer. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Turn off the oven and let the brownie layer cool completely for at least one hour.
- Prepare Chocolate Pudding: In a medium saucepan, whisk together ½ cup sugar, cocoa powder, and cornstarch. Add milk and vanilla extract, then place over medium heat. Continuously whisk as the mixture heats, allowing it to simmer gently and thicken into a pudding consistency. Remove from heat once thickened.
- Cool Pudding: Spread the warm chocolate pudding evenly over the cooled brownie layer. Cover the pudding surface tightly with plastic wrap to prevent skin formation and refrigerate for at least 2 hours or overnight to chill thoroughly.
- Make Whipped Cream: Using a hand mixer, whip the heavy cream in a medium bowl at high speed until soft peaks form. Gradually add the powdered sugar on low speed, then increase speed again to whip until stiff peaks form.
- Assemble and Garnish: Spread the whipped cream evenly over the chilled pudding layer. Sprinkle the chopped chocolate chips on top as garnish. Serve and enjoy your delicious Mississippi Mud Pie!
Notes
- Make sure the crust completely cools before adding the brownie batter to avoid uneven baking.
- Allow the brownie layer to fully cool before adding the pudding to prevent melting or mixing layers.
- Press plastic wrap directly on the pudding surface to avoid forming an unpleasant skin.
- The dessert can be made a day ahead for best flavor and texture.
