Description

This Miso-Roasted Carrots recipe features fresh carrots roasted to tender perfection and glazed with a flavorful mixture of white miso paste, brown sugar, soy sauce, garlic, ginger, and sesame oil. Garnished with sesame seeds, chopped cilantro, green onion, and chili crisp, this dish offers a delightful balance of savory, sweet, and umami flavors, perfect as a side for any meal.

Ingredients

Carrots

  • 2 pounds fresh carrots with tops
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Glaze

  • 2 tablespoons white miso paste
  • 2 tablespoons packed brown sugar
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon sesame oil, plus more for garnish
  • 2 teaspoons minced fresh gingerroot
  • 1 garlic clove, minced

Garnish

  • Sesame seeds
  • Chopped cilantro
  • Chopped green onion
  • Chili crisp

Instructions

  1. Prep the carrots: Trim the green tops of the carrots, leaving just a few short stems. If the carrots are unpeeled, wash them thoroughly and pat dry before roasting.
  2. Preheat the oven and season: Set the oven to 400°F (200°C). Arrange the carrots on an unlined baking sheet. Drizzle with olive oil, then sprinkle with salt and pepper. Toss to coat evenly.
  3. Roast the carrots: Roast in the preheated oven for 8 to 10 minutes until the carrots just begin to soften.
  4. Prepare the glaze: While the carrots roast, mix white miso paste, brown sugar, reduced-sodium soy sauce, minced ginger, minced garlic, and sesame oil in a small bowl until well combined.
  5. Glaze the carrots: Remove the carrots from the oven and brush the miso glaze evenly over all sides of each carrot.
  6. Finish roasting: Return the glazed carrots to the oven for 10 to 12 minutes more, turning halfway through cooking. Roast until the carrots are tender and slightly caramelized.
  7. Serve: Transfer the roasted carrots to a serving platter. Drizzle with extra sesame oil and sprinkle with your choice of sesame seeds, chopped cilantro, chopped green onions, and chili crisp. Serve warm. Adjust roasting time for desired tenderness.

Notes

  • If you prefer a slight crunch, roast for the shorter end of the time range; for tender carrots, cook longer.
  • Leaving the carrot skins on adds nutrients and texture; just wash well before roasting.
  • For a gluten-free option, ensure to use gluten-free soy sauce or tamari.
  • Chili crisp adds heat and texture but can be omitted or adjusted to taste.
