Ingredients
Pasta
- 8 ounces spaghetti
Sauce and Vegetables
- 1 tablespoon avocado oil (or oil of choice)
- 1 tablespoon vegan butter
- 5 ounces shiitake mushrooms, sliced
- Sea salt and black pepper to taste
- 4 cloves garlic, minced
- 3 tablespoons white miso
- 1 to 1 ½ cups pasta water (start with 1 cup)
- ¼ cup vegan Parmesan cheese
- 2 tablespoons fresh parsley, chopped (or herb of your choice)
Instructions
- Cook Pasta: Prepare the spaghetti according to the package instructions in a large pot of well-salted water until al dente. Drain the pasta, reserving some pasta water for the sauce.
- Sauté Mushrooms: Heat 1/2 tablespoon of avocado oil and 1 tablespoon of vegan butter in a large pan over medium-high heat. Add the sliced shiitake mushrooms and sauté for 5 to 8 minutes until they are golden brown. Season lightly with sea salt and black pepper. Remove the mushrooms from the pan and set aside.
- Adjust Heat for Garlic: Reduce the heat to medium-low and allow the pan to cool for about 3 minutes to prevent burning the garlic and drying out the sauce.
- Sauté Garlic and Prepare Sauce: Add the remaining 1/2 tablespoon of avocado oil to the pan. Add the minced garlic and sauté briefly for about 1 minute until fragrant. Stir in the white miso and pour in 1 cup of the reserved pasta water. Whisk continuously until the miso is fully dissolved and the sauce is smooth.
- Add Vegan Parmesan: Stir the vegan Parmesan cheese into the sauce until combined.
- Combine Pasta and Mushrooms: Return the cooked pasta and sautéed mushrooms to the pan. Add the chopped parsley and toss everything together until well mixed. If needed for a creamier sauce, add pasta water 2 tablespoons at a time.
- Adjust Seasoning and Serve: Taste and adjust seasoning with additional salt and pepper if desired. Turn off the heat to avoid drying out the pasta. Serve immediately and enjoy!
Notes
- Reserve some pasta water to help create a creamy miso sauce.
- Use vegan butter and vegan Parmesan to keep this recipe entirely plant-based.
- Feel free to substitute parsley with herbs like basil or chives according to preference.
- Adjust miso quantity to taste, as it can be quite salty and savory.
- Be careful not to burn the garlic by lowering the heat before sautéing it.
