Ingredients
Italian Dressing
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon honey
- 2 teaspoons lemon juice
- 1 & 1/2 teaspoons dried Italian seasoning
- 3/4 teaspoon garlic powder
- Pinch of cracked red pepper flakes
- Pinch of black pepper
For the Kabobs
- 8 ounce package refrigerated cheese tortellini
- 4 ounces provolone cheese (6 thin slices), cut into small squares
- 50 thin slices salami
- 25 pimiento-stuffed green olives (or black olives)
- 25 small cherry tomatoes
- Small cocktail skewers
Instructions
- Make the dressing: In a jar with a tight-fitting lid, combine olive oil, red wine vinegar, grated Parmesan cheese, honey, lemon juice, dried Italian seasoning, garlic powder, cracked red pepper flakes, and black pepper. Shake vigorously until the dressing is well blended and emulsified. Taste and adjust seasonings as needed.
- Cook tortellini: Prepare the refrigerated cheese tortellini according to the package directions. Once cooked, drain and rinse thoroughly under cold water to stop cooking and cool them down.
- Marinate tortellini: Place the cooled tortellini into a plastic ziplock bag and add the prepared Italian dressing. Seal the bag, gently toss to coat the tortellini evenly, then refrigerate for at least 3 hours, preferably overnight, to allow flavors to meld.
- Prepare kabobs: After marinating, drain the tortellini well and discard the excess marinade. On each cocktail skewer, thread the tortellini, a slice of salami (folded twice), 1 to 2 pieces of provolone cheese, and either an olive or a cherry tomato, arranging them attractively.
- Serve and enjoy: Arrange the mini kabobs on a platter and serve as a delicious appetizer or snack that everyone will love.
Notes
- The Italian dressing can be made ahead and stored in a sealed container in the refrigerator; bring to room temperature and shake well before using.
- Marinate the tortellini overnight if possible to enhance the flavor.
- Use cocktail or small skewers for easier handling and perfect bite-sized servings.
- Salami slices are folded for better presentation and to fit neatly on the skewers.
