Ingredients

Crust

  • 2 cups (240g) graham cracker crumbs (about 16 full sheet graham crackers)
  • 1/3 cup (67g) packed light or dark brown sugar
  • 1/2 cup (8 Tbsp; 113g) unsalted butter, melted

Filling

  • 1 cup (240ml) cold heavy cream or heavy whipping cream
  • 16 ounces (452g) full-fat brick cream cheese, softened to room temperature
  • 1/3 cup (67g) granulated sugar
  • 2 Tablespoons (30g) sour cream or plain yogurt, at room temperature
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon pure vanilla extract

  • Your choice of toppings such as fresh berries, chocolate shavings, caramel sauce, or fruit compote


Instructions

  1. Prepare muffin pans: Line two standard 12-count muffin pans with cupcake liners. Ensure you have sufficient refrigerator space for them later.
  2. Make crust mixture: If needed, grind graham crackers into fine crumbs using a food processor. Combine crumbs with brown sugar and melted butter in a bowl until mixture resembles wet sand.
  3. Form crusts: Spoon 1 and 1/2 tablespoons of crust mixture into each liner. Press firmly with the back of a spoon to compact.

  6. Prepare cheesecake filling: With a mixer fitted with whisk or paddle attachment, beat cream cheese and granulated sugar on medium speed until smooth and creamy. Scrape bowl as needed. Add sour cream, lemon juice, and vanilla extract; beat on medium-high speed until well combined and smooth, about 1 minute.
  7. Fold whipped cream: Gently fold whipped cream into cream cheese mixture on low speed or using a spatula to combine without deflating whipped cream.
  8. Fill crusts: Transfer the filling atop the crusts using a spoon or a piping bag fitted with a large star or round tip. Pipe or spoon approximately 2 tablespoons over each crust and smooth the tops for an even finish.
  9. Chill cheesecakes: Refrigerate the filled mini cheesecakes for at least 3 hours or up to 2 days. Cover with plastic wrap or aluminum foil if chilling longer.
  10. Serve and store: Keep refrigerated until ready to serve. Cheesecakes may soften after 30–60 minutes at room temperature. Store leftovers covered in the refrigerator for up to 5 days.
