- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Cheesecake Batter
- 24 ounces cream cheese (room temperature)
- 6 ounces granulated sugar
- 1/8 teaspoon salt
- 1/2 tablespoon vanilla extract
- 2 ounces heavy cream (room temperature)
- 2 ounces sour cream (room temperature)
- 3 large eggs (room temperature)
Additional Cheesecake Variations
- 2 ounces semi-sweet chocolate (melted, for chocolate cheesecake batter)
- 1 ounce Oreo cookies (crushed, for Oreo cheesecake batter)

Strawberry Puree & Glaze
- 4 ounces strawberries (fresh or frozen)
- 1 Tablespoon sugar
- 1 teaspoon lemon juice
Whipped Cream & Chocolate Glaze
- 4 ounces heavy whipping cream
- 4 ounces semi-sweet or dark chocolate
- 1 ounce unsalted butter (softened)
Instructions
- Prepare the Brownie Layer: Preheat your oven to 350ºF and line the cheesecake pans with parchment paper at the bottom. Melt the butter and chocolate together either over a simmering water bath or in the microwave, then let cool until just warm. Whisk together the sugars, salt, vanilla, and eggs until combined. Sift the flour and cocoa powder. Incorporate the melted chocolate mixture into the egg mixture, then fold in the flour mixture gently until smooth without overmixing. Divide the batter into pans and bake for 14-15 minutes until a toothpick shows moist crumbs. Let cool.
- Make the Strawberry Puree: Blend strawberries until smooth. Heat the puree with sugar in a saucepan until sugar dissolves, add lemon juice, then cool. The puree can be made before or after cooking.
- Prepare Plain Cheesecake Batter: Reduce oven temperature to 335ºF. Use a paddle attachment to blend cream cheese and sugar until lump-free and smooth. Scrape the bowl down. Add sour cream and heavy cream, mixing on low speed until smooth. Add eggs one at a time, mixing on low and scraping the bowl after each addition until just combined and smooth.
- Divide and Customize Cheesecake Batters: Separate batter into four bowls. For Oreo variation, stir crushed Oreos into one bowl. For chocolate cheesecake, blend in sifted cocoa powder and melted semi-sweet chocolate. For strawberry marbled batter, blend one ounce of plain cheesecake batter with two ounces strawberry puree.
- Assemble Cheesecakes: Pour brownie layer into pans first. For Oreo cheesecake, pour Oreo batter over brownie. For plain cheesecake with hearts, fill pans with plain batter, then use a squeeze bottle or piping bag to pipe a ring of strawberry puree dots and drag a toothpick to create heart shapes, adding a heart in the center. For strawberry marbled, alternate spoons of plain batter and strawberry batter, then marble with a toothpick. For chocolate cheesecake, pour chocolate batter over the cooled brownie.
