Description

Ingredients

Brownie Bites

  • 9 Tbsp unsalted butter, cut into 1 Tbsp pieces
  • 1 cup (200g) granulated sugar
  • 1/4 tsp (heaping) salt
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 2/3 cup (86g) all-purpose flour (spoon and level to measure)
  • 6 Tbsp (36g) Dutch process cocoa powder, plus 2 tsp for dusting pan
  • 1/2 cup (85g) mini semi sweet chocolate chips


Instructions

  1. Preheat the oven: Set your oven to 325°F (163°C) to prepare for baking the brownie bites.
  2. Prepare the muffin pan: Spray a 24-cup mini muffin pan with non-stick cooking spray and dust it evenly with 2 teaspoons of cocoa powder, shaking off the excess. This prevents sticking and adds a slight cocoa coating.
  3. Melt the butter: Place the butter pieces in a large microwave-safe bowl, heat until just melted, then allow it to cool slightly so it doesn’t cook the eggs in the next step.
  4. Mix sugar and eggs: Whisk the sugar and salt into the melted butter until well combined, then whisk in the eggs and vanilla extract thoroughly to create a smooth mixture.
  5. Add dry ingredients: Stir in the all-purpose flour and cocoa powder by scraping the sides and bottom of the bowl to ensure everything is fully incorporated without overmixing.
  6. Incorporate chocolate chips: Fold in the mini semi sweet chocolate chips evenly throughout the batter.
  7. Fill the muffin pan: Using about 1.5 tablespoons of batter per cup (a #40 scoop works perfectly), fill each cup nearly full with the brownie batter.
  8. Bake: Place the muffin pan in the preheated oven and bake for about 15 to 17 minutes, or until the brownies are just set. Test doneness by inserting a toothpick in the center; it should come out free of batter but may have moist crumbs.
  9. Cool: Allow the brownie bites to cool in the pan for 15 minutes before transferring them to a wire rack to cool completely.
