Description

These Mediterranean Wraps are a flavorful and healthy meal option featuring marinated grilled chicken, sautéed bell peppers and onions, and fresh vegetable toppings wrapped in soft tortillas with creamy hummus and tangy feta cheese. Perfect for a quick lunch or light dinner, they offer a delicious combination of vibrant Mediterranean flavors and textures.


Ingredients

Chicken and Marinade

  • 1 lb chicken breasts or thighs (rotisserie chicken can also be used)
  • 1 lemon, squeezed
  • ¼ cup olive oil
  • 1 tsp garlic powder
  • ½ tsp Italian Seasoning Blend (dried oregano, dried basil, dried thyme)
  • ½ tsp salt
  • ½ tsp smoked paprika

Wrap Filling

  • 4-6 large tortillas
  • 1 cup hummus
  • ¼ cup cucumber, sliced
  • ¼ cup tomatoes, chopped
  • 1 cup romaine lettuce, shredded
  • ¼ cup feta cheese, crumbled
  • ¼ cup olives, chopped (kalamata or green olives)
  • 1 bell pepper, sliced and sautéed
  • ½ red onion, sliced and sautéed


Instructions

  1. Marinate the Chicken: If not using rotisserie chicken, slice the chicken breasts in half and place them in a large bowl. Add lemon juice, olive oil, garlic powder, Italian seasoning, salt, and smoked paprika. Toss to coat evenly and let marinate for 20 minutes if time allows.
  2. Cook the Chicken: Heat 1 teaspoon of oil in a large skillet over medium-high heat. Add the marinated chicken pieces and cook for about 8-10 minutes on each side, flipping multiple times to ensure even cooking. Cook until the internal temperature reaches 165ºF. Remove chicken from skillet and set aside.
  3. Sauté Peppers and Onions: In the same skillet, add 1 teaspoon of oil and the sliced bell pepper and red onion. Sauté for about 5 minutes until softened and sweating. Season lightly with salt. Remove from heat.
  4. Toast Tortillas (Optional): Warm the tortillas by toasting each one on the stove for about 45 seconds per side. This step enhances flavor and pliability but can be skipped if desired.
  5. Assemble the Wraps: Spread a generous layer of hummus on each tortilla. Add shredded romaine, sliced cucumbers, chopped tomatoes, chopped olives, crumbled feta, sautéed peppers and onions, and cooked chicken pieces. Fold the bottom of the tortilla up halfway, then fold in the sides and secure with a toothpick if needed.
  6. Serve: Serve the Mediterranean wraps with extra hummus and sriracha on the side if desired. Enjoy immediately for the best freshness and flavor.

  • You can use rotisserie chicken for a shortcut and skip the marinating and cooking steps.
  • To keep wraps together, secure with toothpicks after folding.
