Description

This hearty Meatloaf Egg Scramble is a flavorful and satisfying breakfast or brunch option that cleverly repurposes leftover meatloaf. Featuring golden cubed potatoes, tender zucchini, and fluffy scrambled eggs topped with melted sharp cheddar cheese, this skillet dish combines savory flavors and a variety of textures in just minutes.

Ingredients

Meatloaf and Vegetables

  • 2 slices leftover meatloaf, cubed
  • 1 tbsp olive oil
  • 2 medium white potatoes, cubed
  • 1 zucchini, cubed

Egg Mixture

  • 4 eggs, beaten
  • 1/2 cup shredded sharp cheddar cheese
  • Salt and fresh cracked black pepper, to taste
  • Chopped parsley, for garnish

Instructions

  1. Parboil Potatoes: Cube the potatoes and place them in a microwave-safe bowl covered with water. Microwave on high for 5 minutes to parboil, then drain and set aside to cool slightly.
  2. Prepare Ingredients: While potatoes are cooking, cut the leftover meatloaf slices and zucchini into small cubes and set aside.
  3. Cook Meatloaf and Potatoes: Heat olive oil in a hot skillet over medium-high heat. Add the cubed meatloaf and pan-sear for about 3 minutes until slightly crisp. Then add the parboiled potatoes and continue browning for several minutes until golden and heated through.
  4. Add Zucchini: Stir in the cubed zucchini and cook for another minute until just tender but still crisp.
  5. Add Eggs and Scramble: In a bowl, whisk the eggs thoroughly, then pour evenly over the meat and vegetable mixture in the skillet. Stir gently with a spatula to combine and cook until eggs are set to your liking.
  6. Add Cheese and Season: Sprinkle the shredded sharp cheddar cheese on top, allowing it to melt into the scramble. Season with salt and fresh cracked black pepper to taste.
  7. Garnish and Serve: Remove from heat, garnish with chopped parsley, and serve immediately for a fulfilling, savory meal.

Notes

  • Parboiling the potatoes ensures they cook quickly and evenly when pan-fried.
  • Use leftover meatloaf for added flavor and efficiency, but fresh ground meatloaf mixture can also be cooked and cubed if preferred.
  • Adjust seasoning according to taste; cheese adds saltiness so season lightly at first.
  • For a lower-fat version, use less oil and a reduced-fat cheese.
  • Serve with a side of fresh fruit or toast for a complete breakfast.
