Ingredients
Dry Ingredients
- 1¾ cups all purpose flour, spooned into measuring cup and leveled-off
- ¾ teaspoon baking soda
- ¾ teaspoon salt
- 2 teaspoons natural unsweetened cocoa powder, such as Hershey’s
Wet Ingredients
- 1 cup sugar
- 1 stick (½ cup) unsalted butter, softened
- 2 large eggs
- 1 cup mashed very ripe bananas, from 2-3 bananas
- ½ cup sour cream
- 1 teaspoon vanilla extract
Chocolate Swirl
- 3 ounces semisweet chocolate, chopped (a heaping ½ cup)
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Generously grease a 9 x 5-inch loaf pan with butter or nonstick cooking spray to ensure easy removal after baking.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set this mixture aside for later.
- Make Batter Base: Using an electric mixer, beat the softened butter and sugar until the mixture is light and fluffy, which takes about 2 minutes. Add the eggs one at a time, beating well after each addition. Then, add the flour mixture and mix on low speed just until combined to avoid overdeveloping gluten.
- Add Banana Mixture: Fold in the mashed bananas, sour cream, and vanilla extract, beating briefly until just combined. Be careful not to overmix to keep the bread tender.
- Melt Chocolate and Prepare Cocoa Mixture: Place the chopped semisweet chocolate in a microwave-safe bowl. Microwave in 20-second intervals on high, stirring between each, until about 80% melted. Stir until smooth using residual heat to melt remaining bits. Mix in the cocoa powder until fully dissolved.
- Create Chocolate Batter: Transfer one cup of the banana bread batter into the melted chocolate and cocoa mixture. Stir thoroughly to combine the batters.
- Layer and Marble Batter: Spoon alternating dollops of plain banana batter and chocolate batter into the prepared loaf pan. Using a knife, gently swirl the two batters together by moving the knife back and forth 4 to 5 times, creating a marbled effect without blending the colors too much.
- Bake: Bake in the preheated oven for about 1 hour and 10 minutes or until a cake tester inserted into the center comes out clean.
- Cool: Let the bread cool in the pan on a wire rack for approximately 10 minutes. Then, remove the loaf from the pan and allow it to cool completely on the rack before slicing.
- Freeze (Optional): Once completely cooled, wrap the bread securely in aluminum foil, freezer wrap, or place it in a freezer-safe bag for up to 3 months. Thaw overnight in the refrigerator before serving.
Notes
- Do not overmix the batter to ensure a tender crumb.
- Use very ripe bananas for the best flavor and moisture.
- When swirling the batter, avoid excessive mixing to keep the marbled effect distinct.
- Store leftover bread wrapped tightly at room temperature for up to 3 days or freeze as directed for longer storage.
- You can substitute sour cream with Greek yogurt if preferred.
