Instructions
- Make the Mango “Milk”: Add the mango, full-fat coconut milk, water, fresh lime juice, maple syrup, vanilla extract (if using), and kosher salt into a high-speed blender. Blend on high for 45 to 60 seconds until the mixture is smooth and creamy, though it might look a bit thick.
- Mix: In a large bowl, combine the oats and chia seeds thoroughly. Pour the mango milk mixture over the oats, then add the diced mango. Stir everything together until well combined. Allow the mixture to sit for at least 5 minutes to let the oats and chia seeds absorb some of the liquid. Stir again to reincorporate any liquid that has gathered on top.
- Store & Serve: Transfer the prepared overnight oats into jars or other airtight containers. Refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld and the oats to soften. Serve cold directly from the fridge or warm gently if preferred. Add optional toppings like nut butter before serving. Leftovers can be stored in the refrigerator for up to 5 days.
