Description

These Lucky Charms Treats are a fun and colorful twist on the classic rice crispy treat, using the iconic Lucky Charms cereal mixed with melted butter and mini marshmallows to create a sweet, chewy, and vibrant snack perfect for parties or an indulgent treat.


Ingredients

Cereal

  • 7 cups Lucky Charms cereal (10 ounces, 275g)

Marshmallow Mixture

  • 5 tablespoons unsalted butter (70g)
  • 7 cups mini marshmallows (12 ounces, 340g)


Instructions

  1. Prepare the Pan:

    Line a 9×9-inch baking pan with parchment paper or foil. Optionally, spray the pan with nonstick cooking spray to help the lining stick in place.

  2. Measure and Reserve Marshmallows:

    Measure out 7 cups of Lucky Charms cereal, then carefully remove about ⅓ cup of the colorful marshmallow pieces from it and set them aside for topping later.

  3. Melt Butter and Marshmallows:

    In a large pot over medium heat, melt 5 tablespoons of unsalted butter. Once melted, add 7 cups of mini marshmallows and stir frequently with a silicone spatula until everything is fully melted, approximately 5 to 7 minutes. Remove the pot from heat immediately after melting.

  4. Combine Cereal and Marshmallow Mixture:

    Quickly add the measured Lucky Charms cereal to the melted marshmallow mixture and fold gently but thoroughly to combine. Work rapidly to prevent the marshmallows in the cereal pieces from melting excessively.

  5. Press Into Pan and Add Topping:

    Pour the combined mixture into the lined baking pan. Using a silicone spatula or the back of a butter stick wrapper, press the mixture evenly into the pan. Sprinkle the reserved colorful marshmallow pieces over the top and press them lightly into the surface for an attractive finish.

  6. Cool and Cut:

    Allow the treats to cool completely at room temperature, about 1 hour. Once set, use the parchment paper to lift the treats from the pan, lightly grease a sharp knife, and cut into 16 squares for serving.

Notes

  • Be sure to work quickly when combining the cereal and marshmallow mixture, as the marshmallows will start to harden as they cool.
  • You can substitute regular sized marshmallows if mini marshmallows aren’t available, but the texture may vary slightly.
  • To prevent sticking when pressing the mixture into the pan, lightly grease the spatula or use a butter wrapper to press down the treats.
  • These treats are best enjoyed the same day but can be stored in an airtight container at room temperature for up to 2 days.
