Instructions

Stir in the bourbon, then continue cooking and stirring for another 20 to 30 minutes until the onions are deeply caramelized and golden in color. Add the minced garlic and stir to combine.
  2. Add Liquids and Simmer: Stir in the dry sherry and cook for about 5 minutes. Add the beef stock and fresh thyme sprigs. Bring the soup to a boil, then reduce the heat to a simmer. Cook uncovered for 15 to 20 minutes, allowing the broth to reduce and thicken slightly.
  3. Prepare Heart Croutons: While the soup simmers, preheat your oven to 350°F (175°C). Using a heart-shaped cookie cutter, cut out hearts from the bread slices. Place them on a baking sheet and brush lightly with olive oil. Bake for 10 to 12 minutes, or until golden and crisp.
  4. Assemble the Soup: Ladle the hot soup into oven-safe ramekins or crocks. Sprinkle a layer of grated Gruyère cheese on top of the soup, then place one heart-shaped crouton over the cheese. Add another generous sprinkle of Gruyère on top of the crouton.
