Ingredients
Produce
- 6 cups fresh cauliflower florets (approximately 2-3 heads)
- 4 green onions, diced
Dairy
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 cups block sharp shredded cheddar cheese
- Butter, for greasing the dish
Meat
- 6 strips crispy cooked bacon, chopped
Spices
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1 teaspoon salt
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C). Butter a 9×13 inch baking dish and set it aside to prepare for the casserole assembly.
- Cook the Bacon: Spray a baking sheet with non-stick spray and lay the bacon strips flat on the pan. Bake in the preheated oven for 15-20 minutes or until crispy. Once cooked, transfer bacon to a paper towel-lined plate to drain excess fat, then chop it into pieces.
- Steam the Cauliflower: Place the cauliflower florets in a large strainer set over a pot with 1-2 inches of boiling water. Cover and steam the cauliflower for 2-3 minutes until tender but not mushy. Remove from heat and set aside.
- Mix the Casserole Ingredients: In a large bowl, combine the mayonnaise, sour cream, garlic powder, onion powder, smoked paprika, salt, most of the chopped bacon, and diced green onions. Add the steamed cauliflower and half of the shredded cheddar cheese. Mix everything thoroughly to coat the cauliflower well.
- Assemble the Casserole: Transfer the cauliflower mixture into the buttered casserole dish. Sprinkle the remaining shredded cheddar cheese, chopped bacon, and green onions evenly over the top.
- Bake: Bake the casserole in the preheated oven for 15-20 minutes until the cheese is melted, bubbly, and slightly golden on top.
- Rest and Serve: Remove the casserole from the oven and let it sit for 5 minutes before serving to let it set and cool slightly.
Notes
- You can substitute mayonnaise with Greek yogurt for a lighter option.
- For a vegetarian version, omit bacon and add smoked paprika for a smoky flavor.
- Make sure not to over-steam the cauliflower to keep some texture.
- This casserole can be prepared ahead and refrigerated before baking; just add a few extra minutes to the baking time if baking cold.
- Leftovers store well covered in the refrigerator for up to 3 days.
