Ingredients

Cookie Dough

  • ½ cup unsalted butter, softened

  • 1 egg, room temperature
  • ¾ cup ricotta cheese, full fat
  • 1 Tbsp lemon zest
  • 1½ Tbsp lemon juice
  • 1⅓ cup all purpose flour (or all purpose gluten free flour)
  • ½ tsp salt
  • 1 tsp baking powder
  • ½ tsp baking soda

Lemon Icing

  • 1 cup confectioner sugar
  • 1½ Tbsp lemon juice
  • Pinch of lemon zest


Instructions

  1. Cream Butter and Sugar: In a large bowl, add the softened butter and granulated sugar. Beat with an electric mixer or stand mixer until the mixture is light and fluffy.
  2. Add Wet Ingredients: Add the egg, ricotta cheese, vanilla extract, almond extract (if using), lemon zest, and lemon juice. Mix again until all the ingredients are fully combined.
  3. Mix Dry Ingredients: In a separate medium bowl, whisk together the all purpose flour, salt, baking powder, and baking soda. This ensures even distribution of the leavening agents.
  4. Combine Dry and Wet Mixtures: Gradually add the dry ingredients into the wet mixture. Stir just enough to incorporate the flour mixture fully, scraping down the sides of the bowl to avoid any lumps.
  5. Chill Dough: Cover the dough and chill it in the refrigerator for at least 1 hour. You can also chill overnight or up to 2 days to develop more flavor and make the dough easier to handle.
