- Prepare the oven and marinade: Preheat your oven to 275ºF. Squeeze approximately 3 tablespoons of lemon juice from the lemon(s) and slice the remaining lemon. Mince two cloves of garlic and peel the remaining four cloves. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and freshly cracked pepper to create the marinade.
- Marinate the chicken: Pat the chicken breasts dry with paper towels to ensure a crispy finish. Place them in a glass or ceramic casserole dish. Pour the lemon marinade over the chicken, using a spoon to evenly coat the surface. Arrange the peeled garlic cloves and lemon slices around the chicken. For a less bitter flavor, reserve additional lemon slices to add after baking. Cover the dish tightly with aluminum foil.
- Slow roast the chicken: Roast the chicken in the preheated oven at 275ºF for 90 minutes. This slow roasting helps the chicken absorb the flavors and stay moist.
- Finish roasting at high heat: Increase the oven temperature to 425ºF and remove the foil from the dish. Baste the chicken with the juices collected at the bottom of the pan.
