Ingredients

Crust and Topping

  • ¾ cup (1 ½ sticks / 170 g) unsalted butter, melted

Lemon Filling

  • 1 can (14 ounces) sweetened condensed milk
  • ½ cup (115 g) freshly squeezed lemon juice (about 3 lemons)
  • 2 large egg yolks
  • 1 teaspoon lemon zest
  • ⅛ teaspoon kosher salt


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper. This ensures easy removal of the bars and prevents sticking.
  2. Prepare Oat Crust Mixture: In a large bowl, combine quick-cooking oats, all-purpose flour, light brown sugar, baking powder, and baking soda. Pour the melted unsalted butter over the dry ingredients and mix gently until the mixture becomes crumbly without overmixing.
  3. Reserve Crumb Topping: Measure out about 2 cups, which is half of the oat mixture, and set this portion aside to be used as the crumb topping later.
