Ingredients
Pizza Dough
- 1 lb pizza dough, at room temperature
Toppings
- 3 tablespoons olive oil
- 8 cloves garlic, minced
- 3 cups shredded mozzarella cheese
- 14 ounces quartered artichoke hearts, drained and patted dry
- Zest of 1 lemon
- 2 to 3 cups baby arugula
- 1/3 cup freshly grated Parmesan cheese
- Freshly squeezed lemon juice (to taste)
- Dash of crushed red pepper flakes
- Sea salt, to taste
- Fresh basil, for garnish (optional)
Instructions
- Preheat the Oven: Place your pizza stone in the oven if you have one, and preheat the oven to 500°F. If you don’t have a pizza stone, prepare a baking sheet for cooking the pizza.
- Prepare the Dough: Ensure your pizza dough is at room temperature. Divide the dough into 2 even pieces to make two smaller pizzas.
- Shape the Dough: On a lightly floured surface, take one dough ball and gently press it into a circle using your fingers. Stretch it to a 10 to 12-inch diameter, taking care not to overstretch.
- Transfer Dough to Peel or Sheet: Lightly flour a pizza peel (or the back of a rimmed or rimless baking sheet). Place the stretched dough onto the peel or baking sheet.
- Add Toppings: Brush the dough’s center evenly with olive oil, then sprinkle minced garlic over it. Distribute shredded mozzarella cheese on top, arrange the artichoke hearts evenly, and sprinkle with lemon zest. Divide toppings between the two pizzas.
- Bake the Pizza: Using the pizza peel, carefully slide the pizza onto the preheated pizza stone or place the baking sheet directly into the oven. Bake for 12-14 minutes until the crust is golden brown on edges and bottom.
- Finish and Serve: Remove the pizza from the oven. Top with baby arugula, grated Parmesan cheese, a squeeze of fresh lemon juice, crushed red pepper flakes, and sea salt to taste. Garnish with fresh basil if desired. Slice and serve immediately.
Notes
- Ensure the dough is at room temperature before stretching to make shaping easier.
- If you don’t have a pizza stone, a baking sheet works fine but preheating it can help mimic the effect.
- Pat artichoke hearts dry to prevent excess moisture which can make the crust soggy.
- Adjust the amount of crushed red pepper flakes to taste for desired spice level.
- Fresh lemon juice added after baking enhances the bright, fresh flavor.
- For a crispier crust, bake directly on a pizza stone or preheated baking sheet rather than a cold pan.
