Ingredients

Custard

  • 6 ounces white chocolate
  • 1 cup heavy cream

  • 1 ½ teaspoons lemon zest (from 1 medium lemon)

Instructions

  1. Preheat the Oven: Set your oven to 300˚F to prepare for slow baking the custards in a water bath, which ensures gentle cooking for a smooth texture.
  2. Prepare Baking Pan: Arrange 8-10 small ramekins, bowls, or small mason jars in a 9×13-inch baking pan or a pan tall enough to hold water up halfway on the sides of the pots. Set this pan aside for now.
  3. Heat the Cream and Melt Chocolate: In a microwave-safe bowl, gently heat the heavy cream until it just begins to bubble, about 2-3 minutes, depending on your microwave. Remove from heat and add the white chocolate. Let it sit for 30 seconds, then stir until the mixture is smooth and fully combined.
  4. Mix Egg Yolks and Flavorings: While the cream is heating, whisk together the egg yolks and sugar in a separate bowl until combined. Add the fresh lemon juice, lemon zest, Limoncello, and a pinch of salt, then stir well to incorporate all flavors evenly.
  5. Temper the Egg Mixture: Slowly pour about 1/4 of the hot cream and chocolate mixture into the egg yolk mixture while continuously stirring to prevent curdling. Then gradually add the rest of the hot cream while stirring until fully mixed and smooth.
  6. Fill Ramekins and Bake in Water Bath: Pour the custard mixture evenly into the prepared ramekins inside the baking pan. Gently pour hot water into the pan, filling it halfway up the sides of the ramekins to create a bain-marie (water bath). Carefully transfer the pan to the oven and bake for 20-30 minutes. The custards are done when they are mostly set with a slight jiggle in the center.
