Ingredients

Meat Mixture

  • 2 tbsp tomato paste
  • 1/2 cup water
  • 1 cup shredded cheddar cheese

Crust

  • 1/2 cup coconut flour
  • 1/4 cup almond flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 6 tbsp butter, melted
  • 1/8 tsp cornbread flavor (optional)
  • 1/4 to 1/2 cup water


Instructions

  1. Preheat Oven: Preheat your oven to 350ºF to prepare for baking your tamale pie.
  2. Cook Meat Mixture: In a 10-inch oven-proof skillet over medium heat, brown the ground beef with salt and pepper until mostly cooked, breaking it up with a wooden spoon. Stir in taco seasoning, chili powder, and minced jalapeno for flavor.
  3. Add Tomato Paste: Whisk tomato paste with 1/2 cup water until smooth, pour over the beef mixture, stir to combine, then remove the skillet from heat. Sprinkle shredded cheddar cheese evenly over the meat.
  4. Prepare Crust Batter: In a large bowl, whisk together coconut flour, almond flour, baking powder, and salt. Stir in eggs, melted butter, and cornbread flavor until fully combined.
  5. Adjust Batter Consistency: Add water gradually (1/4 to 1/2 cup) to the crust mixture until the batter is thick but spreadable, suitable for topping the meat.
  6. Top Meat with Batter: Dollop the batter over the meat filling in the skillet. Use a knife or offset spatula to evenly spread the batter over the top and edges.
