Description

These Keto Egg Bites are a delicious, low-carb breakfast or snack option that combines fluffy eggs with cream cheese, bacon, and a blend of cheddar and pepper jack cheeses. Made with coconut or almond flour, they offer a satisfying and savory taste perfect for a keto lifestyle.

Ingredients

Egg Mixture

  • 4 large eggs
  • 2 ounces cream cheese (softened)
  • 1 cup chopped cooked bacon (5-6 thick slices)
  • 1 1/4 cups shredded cheese (combination of cheddar and pepper jack)
  • 1/3 cup coconut flour OR almond flour
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the egg bites.
  2. Mix Ingredients: In a medium mixing bowl, combine the eggs, softened cream cheese, chopped cooked bacon, shredded cheese, coconut or almond flour, and baking powder. Stir well, making sure to break up any cream cheese lumps for a smooth mixture.
  3. Rest Mixture: Let the mixture sit for 10 minutes. This step allows the flour to absorb moisture, which is crucial for the right texture. Do not skip this step.
  4. Prepare Muffin Pan: Spray a regular mini muffin pan or use a silicone muffin pan with non-stick spray. Fill each cup about 3/4 full with the egg mixture.
  5. Bake: Place the muffin pan in the oven and bake for 15-18 minutes until the egg bites are golden brown and cooked through.

Notes

  • Use a silicone muffin pan if possible for easier removal of the egg bites.
  • The resting time is essential to allow the flour to properly hydrate and prevent dryness.
  • You can swap coconut flour for almond flour depending on your preference or availability.
  • Ensure the bacon is cooked and chopped finely before adding.
  • These egg bites can be stored in the refrigerator for up to 5 days and reheated in a microwave or oven.
