Description

This Kale Cauliflower Caesar Salad combines the earthy flavors of oven-roasted cauliflower with fresh kale, tangy Caesar dressing, and crunchy pumpkin seeds for a nutritious and flavorful meal. Enhanced by dried cranberries and shredded Parmesan cheese, this salad is a perfect balance of texture and taste, ideal for a healthy lunch or a light dinner.

Ingredients

Salad

  • 1 bunch Kale (stemmed, ripped, and washed)
  • 1/4 cup Pumpkin Seeds
  • 1/4 cup Red Onion (diced)
  • 3-4 Tablespoons Dried Cranberries
  • 3-4 Tablespoons Parmesan Cheese (shredded)
  • 1/4 cup Caesar Salad Dressing
  • 2 cloves Garlic (minced)

Oven Roasted Cauliflower

  • 1 head Cauliflower (cut into florets)
  • 1-2 Tablespoons Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Prepare oven-roasted cauliflower: Preheat your oven to 425°F (220°C). Toss cauliflower florets with olive oil, salt, and pepper until evenly coated. Spread them out on a baking sheet and roast for 20-25 minutes, turning halfway through, until they are golden brown and tender.
  2. Combine ingredients: In a large salad bowl, add the stemmed and washed kale, oven-roasted cauliflower, pumpkin seeds, diced red onion, dried cranberries, shredded Parmesan cheese, minced garlic, and Caesar salad dressing.
  3. Toss the salad: Thoroughly toss all the ingredients together to ensure the kale and toppings are evenly coated with the Caesar dressing and garlic is well distributed throughout.
  4. Serve and enjoy: Divide the salad into four servings and serve immediately for the best texture and taste.

Notes

  • You can customize the salad with your favorite nuts or seeds for extra crunch.
  • For a vegan version, substitute Parmesan cheese with a vegan cheese alternative and use a vegan Caesar dressing.
  • Massaging the kale with a bit of olive oil before mixing can make it more tender and easier to eat.
  • The salad can be made ahead, but it’s best to add the dressing just before serving to keep the kale fresh and crisp.
