Description
Easy and flavorful Italian wraps that offer a delicious twist on traditional Italian chopped salad, perfect for a quick and satisfying lunch.
Ingredients
Salad Ingredients
- 1 head of romaine (about 6-7 cups chopped)
- ¼ cup red onion, chopped
- ⅓ cup parmesan cheese
- ½ cup peperoncini
- ½ cup cherry tomatoes
- ⅓ cup black olives
- ½ cup salami, chopped
- ¼ cup pepperoni, chopped
- 4 wraps (any type of choice)
- ¼ cup mozzarella, small balls or shredded
Italian Dressing
- 1 tsp garlic powder
- ½ tsp dried oregano
- 1 tsp dried basil
- ½ cup olive oil
- ½ tsp red pepper flakes
- 2 Tbsp red wine vinegar
- 1 tsp Dijon mustard (optional)
Instructions
- Prepare the Salad: Chop the romaine lettuce and add it to a large bowl. Next, chop the remaining ingredients into small bite-sized pieces, then add them along with the parmesan cheese to the bowl.
- Make the Italian Dressing: Combine the garlic powder, dried oregano, dried basil, olive oil, red pepper flakes, red wine vinegar, and optional Dijon mustard in a jar. Shake well or whisk in a bowl until fully blended. Pour the dressing immediately over the salad. If prepared ahead, shake or mix again before adding to the salad.
- Toss and Soften: Toss the salad thoroughly to coat all ingredients with dressing. Add the mozzarella balls on top and let the salad sit for a few minutes. This resting time allows the salad to soften and absorb the dressing, which helps the wraps stay together during assembly.
- Assemble Wraps: After the salad has softened, spoon the mixture evenly onto each wrap. Roll up tightly to form wraps and serve promptly for best texture and flavor.
Notes
- Plant-based Parmesan and pepperoni alternatives can be used for a vegetarian or plant-based version.
- Allowing the salad to soften and soak up dressing before assembling helps the wraps hold together better.
