Ingredients

Salad Ingredients

  • 1 head of romaine (about 6-7 cups chopped)
  • ¼ cup red onion, chopped
  • ⅓ cup parmesan cheese
  • ½ cup peperoncini
  • ½ cup cherry tomatoes
  • ⅓ cup black olives
  • ½ cup salami, chopped
  • ¼ cup pepperoni, chopped
  • 4 wraps (any type of choice)
  • ¼ cup mozzarella, small balls or shredded

Italian Dressing

  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • 1 tsp dried basil
  • ½ cup olive oil
  • ½ tsp red pepper flakes
  • 2 Tbsp red wine vinegar
  • 1 tsp Dijon mustard (optional)


Instructions

  1. Prepare the Salad: Chop the romaine lettuce and add it to a large bowl. Next, chop the remaining ingredients into small bite-sized pieces, then add them along with the parmesan cheese to the bowl.
  2. Make the Italian Dressing: Combine the garlic powder, dried oregano, dried basil, olive oil, red pepper flakes, red wine vinegar, and optional Dijon mustard in a jar. Shake well or whisk in a bowl until fully blended. Pour the dressing immediately over the salad. If prepared ahead, shake or mix again before adding to the salad.
  3. Toss and Soften: Toss the salad thoroughly to coat all ingredients with dressing. Add the mozzarella balls on top and let the salad sit for a few minutes. This resting time allows the salad to soften and absorb the dressing, which helps the wraps stay together during assembly.
  4. Assemble Wraps: After the salad has softened, spoon the mixture evenly onto each wrap. Roll up tightly to form wraps and serve promptly for best texture and flavor.
