Description

This Italian Spinach recipe is a quick and flavorful sautéed vegetable dish combining fresh baby spinach, ripe tomatoes, garlic, and red onions, perfect as a healthy side or a light meal. With just 15 minutes of cooking time, it offers a vibrant and nutritious way to enjoy leafy greens infused with classic Italian flavors.

Ingredients

Vegetables and Aromatics

  • 1/2 peeled and julienned red onion
  • 3 finely minced cloves of fresh garlic
  • 2 vine-ripe or Roma tomatoes, cut into wedges
  • 10 oz baby spinach (approximately 6 packed cups)

Others

  • 1 tablespoon olive oil
  • Sea salt, to taste
  • Fresh cracked black pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat the Oil: Place 1 tablespoon of olive oil in a large sauté or frying pan and heat it over medium to medium-high heat until it begins to lightly smoke, ensuring the oil is hot enough for sautéing.
  2. Sauté Onions and Garlic: Add the julienned red onions and finely minced garlic to the hot oil. Cook for 2 to 4 minutes, stirring occasionally, until the onions turn lightly browned and fragrant.
  3. Add Tomatoes: Introduce the tomato wedges to the pan and continue sautéing for another 2 to 3 minutes, allowing the tomatoes to soften slightly and meld with the onions and garlic.
  4. Cook the Spinach: Add the baby spinach to the pan, stirring to combine. Cook for 1 to 2 minutes or until the spinach wilts down but remains vibrant green.
  5. Season and Serve: Remove from heat. Season the spinach mixture with sea salt, fresh cracked black pepper, and optionally sprinkle with grated Parmesan cheese. Serve immediately as a flavorful side dish or light main.

Notes

  • Use fresh, high-quality baby spinach for the best texture and flavor.
  • If you prefer, substitute Roma tomatoes with any ripe tomato variety available.
  • Grated Parmesan cheese is optional but adds a lovely savory note.
  • For a vegan version, omit the Parmesan or use a plant-based alternative.
  • Serve as a healthy side with grilled meats, pasta, or crusty bread.
