For the Sandwiches
- 8 hoagie rolls
- 8 slices provolone cheese
- 16 jar sliced pepperoncini
Instructions
- Prepare the broth and seasoning mixture: In your crock-pot, combine 2 cups of low sodium beef broth with 1 packet of au jus gravy mix. Stir well to dissolve the gravy mix evenly into the broth.
- Add the roast and peppers: Place the 2.5 lbs top round roast into the crock-pot. Add the sliced bell peppers on top of the roast. Sprinkle the 0.7 oz pack of Italian salad dressing mix evenly over the meat and peppers to infuse Italian flavors.
- Cook the meat and peppers: Cover the crock-pot and cook on high for 4 to 5 hours or on low for 8 to 10 hours, until the beef is tender and easily shredded.
- Shred the beef: Remove the roast from the crock-pot and shred it using two forks until pulled apart into bite-sized pieces. Return the shredded beef back into the crock-pot to soak up the juices and flavor.
- Assemble the sandwiches: On the bottom half of each hoagie roll, place a slice of provolone cheese. Layer with a generous amount of shredded beef and bell peppers. Top with two slices of pepperoncini for a spicy tang.
- Serve with au jus: Optionally, spoon some of the cooking liquid onto the top half of the sub rolls or serve the broth separately in bowls for dipping sandwiches, enhancing each bite with flavorful au jus.
