Crust and Garnish

  • Whipped cream (optional topping)
  • Unsweetened cocoa powder (optional topping)
  • Cold water and ice (for ice bath)


Instructions

  1. Prepare Ice Bath: Add cold water and ice to a large, shallow bowl or baking dish. Place it in the freezer until ready to use; this will help cool the marshmallow mixture quickly later on.
  2. Dissolve Espresso: In a small bowl, combine the half and half with the instant espresso powder, stirring until the espresso powder has completely dissolved to create a smooth coffee-flavored base.
  3. Melt Marshmallows: In a medium saucepan over low heat, add the marshmallows along with the half and half espresso mixture. Stir constantly for about 10 minutes until the marshmallows are fully melted and the mixture is smooth. Then remove from heat.
  4. Cool Mixture: Remove the ice bath from the freezer and place the saucepan in it. Continue stirring the marshmallow mixture until it cools to room temperature. Once cooled, stir in the whiskey until evenly incorporated, then remove the saucepan from the ice bath.
  5. Fold in Whipped Topping: Gently fold the thawed whipped topping into the marshmallow mixture until well combined, being careful not to deflate the whipped topping.
  6. Assemble Pie: Pour the filling into the 9-inch graham cracker crust, spreading it evenly. Cover the pie and refrigerate for at least 4 hours, or up to overnight, to allow it to set properly.
