Ingredients
Sausage and Aromatics
- 1 tablespoon olive oil
- 1 pound spicy Italian sausage
- 1 small yellow onion, peeled and diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
Broth and Vegetables
- 6 cups chicken stock
- 1 1/2 pounds baby yellow potatoes, cut in half
- 2 cups chopped kale leaves
- Kosher salt, to taste

- 1 cup half and half
Instructions
- Heat Oil and Sausage: Add your Instant Pot to the sauté function and heat the olive oil until hot. Add the spicy Italian sausage, crumble it in the pot, and cook until lightly browned, about 5 minutes.
- Sauté Onions: Add the diced yellow onion to the pot and cook for 5 minutes or until the onions become translucent and soft.
- Add Garlic and Oregano: Stir in the minced garlic and dried oregano; cook for about 30 seconds to release their aromas.
- Add Broth and Potatoes: Turn off the sauté function. Pour in the chicken stock and scrape the bottom of the pot to release any flavorful browned bits. Stir in the halved baby yellow potatoes.
- Pressure Cook: Secure the Instant Pot lid and set the valve to the sealing position. Use the Pressure Cook (Manual) setting and cook on high pressure for 5 minutes.
- Release Pressure: After cooking, perform a quick release by carefully turning the valve to venting to release steam quickly. Remove the lid once the pressure is fully released.
- Add Kale and Half and Half: Stir in the chopped kale and half and half. Let the soup sit off heat for a few minutes to allow the kale to wilt and the half and half to heat through.
- Season and Serve: Taste the soup and season with kosher salt as desired. Serve warm for a delicious, creamy Italian soup experience.

- You can substitute spicy Italian sausage with mild sausage if you prefer less heat.
- Baby yellow potatoes are ideal for their creamy texture, but red or Yukon gold potatoes can work as well.
