This hearty and nutritious Instant Pot Vegetable Barley Soup is a comforting blend of pearl barley, fresh vegetables, and protein-rich tofu. Ingredients
Soup Base
- ¾ cup pearl barley
- 1 small yellow onion, diced
- 4 garlic cloves, minced
- 3 small russet potatoes, chopped
- 4 ribs celery, sliced
- 3 carrots, diced
- 7 cups water
- 4 to 5 vegetable bouillon cubes or paste equivalent
Additional Vegetables and Protein
- 2 cups frozen broccoli
- 1 cup frozen spinach
- 1 (~16-ounce) package extra firm tofu, diced
Finishing Touches
- Juice of ½ lime
- Salt and pepper, to taste
- Hot sauce, optional
- Minced cilantro, for garnish, optional
Instructions
- Prepare Ingredients: Dice the onion, mince the garlic, chop the potatoes, slice the celery, and dice the carrots to get all your fresh veggies ready for cooking.
- Add to Pressure Cooker: In a 6-quart or larger Instant Pot or pressure cooker, combine the pearl barley, diced onion, minced garlic, potatoes, celery, carrots, water, and start with 4 vegetable bouillon cubes. Stir gently to mix the ingredients.
- Cook Under Pressure: Seal the lid of the pressure cooker and set it to cook on high pressure for 20 minutes. This step softens the barley and vegetables perfectly while developing rich flavors.
- Quick Release and Add Vegetables: Once the cooking cycle ends, carefully use the quick release to vent the steam. Open the lid and immediately stir in the frozen broccoli, frozen spinach, diced tofu, lime juice (if using), and freshly ground pepper.
- Adjust Flavor: Taste the soup and if you desire a stronger broth flavor, stir in the remaining bouillon cube. Add salt and pepper to your preference.
- Serve and Garnish: Ladle the hot soup into bowls. Optionally, drizzle with hot sauce and sprinkle minced cilantro on top for a fresh herbal finish.
