Ingredients
Roasted Garlic
- 1 head garlic
- 1 teaspoon olive oil
Bean Mixture
- 1 pound dry pinto beans, rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 8 cups water
For Sautéing and Final Mixing
- 3 tablespoons olive oil
- ¼ cup reserved bean broth (plus more as needed)
- Zest and juice of 1 lime
Instructions
- Preheat and Roast Garlic: Preheat your oven to 400°F. Slice off the top ¼-inch of the garlic head to expose the cloves. Place the garlic on a piece of foil, drizzle with 1 teaspoon olive oil, wrap loosely to allow steam to build, and roast for 45 minutes until golden brown.
- Prepare Bean Mixture in Instant Pot: Meanwhile, add the rinsed pinto beans, diced onion, minced garlic, salt, and ground cumin into the Instant Pot. Pour in 8 cups of water to cover the ingredients.
- Cook Beans Under Pressure: Seal the Instant Pot valve and set to cook on high pressure/manual mode for 45 minutes. Once complete, allow a natural pressure release for 25 minutes to ensure beans are tender.
- Mash Roasted Garlic: When garlic is done roasting, squeeze the softened cloves onto a cutting board and mash them with a fork to form a paste.
- Drain Beans and Reserve Broth: Carefully remove cooked beans from the Instant Pot, draining well and reserving about ½ cup of the cooking broth for later use.
- Sauté Beans: Switch the Instant Pot to sauté mode and heat 3 tablespoons of olive oil. Add the beans back into the pot along with ¼ cup of the reserved broth. Gently mash the beans using a potato masher or fork, cooking and stirring until you reach a creamy and desired texture, adding more broth as needed to adjust thickness.
- Add Final Flavorings: Stir in the mashed roasted garlic along with lime zest and lime juice. Mix thoroughly to combine all flavors.
- Serve: Serve the warm refried bean dip with chips or as a side dish to your favorite Mexican meals.
Notes
- Soak the beans overnight for faster cooking, although it is not necessary when using an Instant Pot.
- If you prefer spicier dip, add some chopped jalapeños or a pinch of chili powder when sautéing the beans.
