Ingredients

Salsa

  • 2 lbs Roma tomatoes (or vine ripened tomatoes, cut into quarters)
  • 1 – 3 canned chipotle chilies (to taste, they are spicy)
  • 4 Tbsp olive oil, divided
  • 1 cup chopped yellow onion
  • Salt and black pepper, to taste
  • 1 Tbsp minced garlic (about 3 cloves)
  • 2 tsp chili powder (1 tsp regular chili powder + 1 tsp ancho chili powder recommended)
  • 1/4 cup chopped cilantro

Tortillas and Eggs

  • 8 (6-inch) corn tortillas
  • 8 large eggs
  • 1 large avocado, sliced
  • Crumbled cotija cheese, for topping
  • Prepared black beans, refried beans, or cooked chorizo, as desired


Instructions

  1. Prepare the tomato-chipotle salsa: Place half of the quartered tomatoes and all chipotle peppers into a food processor. Pulse in short 1-second bursts until the mixture is finely chopped but not pureed. Transfer to a bowl. Repeat the same process with the remaining tomatoes and add to the bowl.
  2. Sauté onions and spices: Heat 1 tablespoon olive oil in a 12-inch non-stick skillet over medium heat. Add the chopped onion and sauté until tender and translucent, approximately 5 minutes. Stir in the minced garlic and chili powder, cooking for an additional 30 seconds to release their aroma.
  3. Simmer salsa: Pour the chopped tomato-chipotle mixture into the skillet with the onions. Bring the mixture to a gentle simmer, then reduce the heat to medium-low. Season with salt and pepper. Let the salsa gently simmer until it slightly thickens, about 6 to 8 minutes. Stir in chopped cilantro at the end.
  4. Adjust salsa texture (optional): For a smoother consistency, return the salsa to the food processor and pulse a few times until desired smoothness is reached. Otherwise, keep it chunky. Set aside.
  5. Cook the tortillas: Heat a clean 12-inch non-stick skillet over medium heat. Drizzle 2 to 3 teaspoons of olive oil and cook 2 to 3 tortillas at a time. Fry each tortilla until golden brown spots appear on both sides, about 1-2 minutes per side. Transfer cooked tortillas to paper towels to drain excess oil and keep warm by stacking between folded paper towels. Repeat with remaining tortillas.
  6. Fry the eggs: Return the skillet to medium heat. Lightly coat with 1 1/2 teaspoons olive oil or use cooking spray. Crack 1 egg at a time, spacing evenly near the edges of the pan to fit 4 eggs at once. Season each egg with salt and pepper. Fry for 2 minutes uncovered. Cover the skillet with a lid and cook eggs until the whites are set and yolks remain runny, about 1 to 2 minutes longer. For even cooking, you may add 1 tablespoon water before covering to create steam.
  7. Keep eggs warm and finish: Transfer cooked eggs to a plate, cover with foil, and repeat the frying process with the remaining eggs, adding oil as needed.
  8. Assemble the Huevos Rancheros: Place one fried tortilla on each plate. Spoon a heaping amount of the prepared salsa over the tortilla. Top with one fried egg. Add sliced avocado, crumbled cotija cheese, and prepared black beans or chorizo as desired. Serve immediately and enjoy.
