Instructions
- Prepare the egg mixture: In a medium bowl, combine the 3 large eggs with 2 teaspoons of water, a generous pinch of salt, and a few grinds of freshly ground black pepper. Use a fork or whisk to beat vigorously until the mixture is smooth and there are no visible egg whites.
- Melt the butter in the skillet: Place an 8-inch nonstick skillet over medium-low heat. Melt 1 tablespoon of unsalted butter and swirl it to coat the entire surface of the pan evenly.
- Cook the eggs: Pour the beaten eggs into the skillet and let them cook undisturbed until the edges start to set. Once set around the edges, use a rubber spatula to carefully push the cooked portions from the edges toward the center, allowing the uncooked egg to flow to the edges. Continue gently moving and scrambling until the eggs are about 75% set.
- Form the omelette and add fillings: Press the runny eggs into an even layer with the spatula. Sprinkle the shredded cheese and chopped herbs evenly over the eggs and let them cook undisturbed until the cheese mostly melts.
- Fold and serve: Using the spatula, fold the edge of the omelette closest to you toward the center, then fold the opposite edge similarly to create a neat folded omelette. Tilt the pan and gently slide the omelette onto a plate, seam side down. Optionally, use a fork to spear extra butter and run it over the omelette’s top to give it a glossy buttery finish. Serve immediately.
