Description

A refreshing and crunchy Honeycrisp Apple and Broccoli Salad featuring a creamy yogurt-based dressing, sweet raisins, sunflower seeds, and crispy bacon for a perfect balance of flavors and textures. Ideal for a healthy lunch or a vibrant side dish.

Ingredients

Salad

  • 1 Honeycrisp apple, seeded and chopped into bite sized pieces
  • 1 large bunch of broccoli, chopped into florets (or 12 ounce prepared bag)
  • ½ cup chopped red onion
  • ½ cup raisins
  • ½ cup sunflower seeds
  • 4 slices bacon, cooked and crumbled

Dressing

  • ¾ cup plain yogurt
  • 2 Tablespoons milk
  • 2 Tablespoons apple cider vinegar
  • ½ cup sugar or ¼ cup honey
  • Salt & Pepper to taste

Instructions

  1. Prepare the dressing: In a mason jar, add plain yogurt, milk, apple cider vinegar, sugar (or honey), salt, and pepper. Whisk thoroughly until all ingredients are well combined. Refrigerate the dressing until ready to use to allow flavors to meld.
  2. Combine salad ingredients: In a large bowl, add the chopped Honeycrisp apple, broccoli florets, chopped red onion, raisins, and sunflower seeds. Toss these ingredients together evenly to distribute flavors.
  3. Add dressing and marinate: Slowly pour the chilled dressing over the salad mixture. Toss gently to coat all ingredients. Allow the salad to sit for 30 to 60 minutes in the refrigerator so the flavors can meld and broccoli softens slightly.
  4. Finish with bacon: Just before serving, sprinkle the cooked and crumbled bacon over the salad for added crunch and smoky flavor.

Notes

  • This salad will stay tasty and fresh for up to 3 days if covered and stored in the refrigerator.
  • The salad does not get soggy even after sitting, making it excellent for meal prep.
  • If Honeycrisp apples are unavailable, substitute with Gala, Pink Lady, or Jonagold apples for a similar flavor profile.
