Ingredients
Sauce and Marinade
- ¼ cup olive oil
- ¼ cup milk
- 1 tablespoon tomato paste
- 1 tablespoon honey
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
Protein
- 4 boneless skinless chicken breasts
Vegetables and Seasoning
- 5 medium potatoes, cut into chunks
- 2 medium onions, sliced into rings
- 3 medium bell peppers, sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon paprika
- ½ teaspoon oregano
- ½ teaspoon black pepper
Instructions
- Make the sauce: In a bowl, whisk together ¼ cup olive oil, ¼ cup milk, 1 tablespoon tomato paste, 1 tablespoon honey, 3 cloves minced garlic, 1 teaspoon paprika, 1 teaspoon oregano, 1 teaspoon salt, and ½ teaspoon black pepper until smooth and well combined.
- Marinate the chicken: Place the 4 chicken breasts in a bowl and coat them evenly with about half of the prepared sauce. Cover and allow to marinate for 30 minutes at room temperature or up to overnight in the refrigerator. Reserve the remaining sauce for later use.
- Preheat the oven: When ready to cook, preheat your oven to 400°F (200°C) to ensure even baking.
- Season the vegetables: In a large 9×13 inch baking dish, combine the potato chunks, sliced onion rings, and sliced bell peppers. Drizzle with 2 tablespoons olive oil and season with 1 teaspoon salt, 1 teaspoon paprika, ½ teaspoon oregano, and ½ teaspoon black pepper. Toss well to coat evenly and spread into an even layer.
- Assemble the bake: Arrange the marinated chicken breasts on top of the seasoned vegetables in the baking dish. Pour any remaining sauce evenly over the chicken and vegetables.
- Bake covered: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 40 minutes to allow flavors to meld and chicken to begin cooking through.
- Bake uncovered: Remove the foil and continue baking uncovered for an additional 20 to 25 minutes, or until the chicken is fully cooked, the potatoes are tender, and edges are golden brown. For extra color and slight crispness, broil for the last 2 to 3 minutes, watching carefully to prevent burning.
- Rest before serving: Remove the dish from the oven and let it rest for 5 minutes to allow juices to redistribute and flavors to settle. Serve warm.
Notes
- Marinating the chicken overnight enhances the flavor and tenderness.
- You can substitute milk with a dairy-free alternative if desired.
- Adjust the seasoning according to taste, especially salt and pepper.
- Broiling at the end adds a nice golden finish, but watch closely to avoid burning.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
